Although all of our olive oils are first cold pressed (we only do a first pressing), at the start of each harvest season we bottle Olio Nuovo (new oil) - a special limited release of unfiltered cold pressed organic extra virgin olive oil from the first olives harvested that season, mainly from green olives. Hand selected, picked, cold pressed, unfiltered and bottled without delay while still cloudy - the flavours are amazingly vibrant and fruity, as fresh as you can get! This medium flavour intensity oil displays complex fruitiness, green herbaceous characters and a peppery finish. Very popular and highly sought after at harvest time. Enjoy the vibrant flavours while the oil is fresh, drizzle it on everything! No order limit applies this year, however please be aware olio nuovo is in high demand and usually sells out within 2-3 months of harvest.
2023 harvest information
Olive oil reflects the land and climate (terroir) in which it was grown and each season varies slightly. The extra rain leading up to fruit set has resulted in a great crop this year. We then experienced a more typical Grampians summer - the heat and a little stress over summer increases the antioxidant content (polyphenols) which gives a peppery finish, as well as concentrating the flavour of the oil, producing our typically low yield of beautiful, thick and fruity organic olive oil. Olio nuovo features hand selected olive varieties including Verdale, Mission and Benito. Although it varies each season, the typical polyphenol level of Olio Nuovo is in the range 250 - 300 mg/kg (ppm)
Why is fresh oil cloudy?
Olive oil this fresh and unfiltered is cloudy due to fine particles of olive flesh suspended in the oil. These are high in antioxidants and contribute to the vibrant flavour of freshly pressed oil. Because this oil is bottled straight from the press the settling process that normally happens in our tanks will occur in your bottle or tin, so expect to find some sediment at the bottom. We recommend using as much oil as possible when it's cloudy! Once settled, it it best to decant the clear oil.
Packaging
Glass bottles have a pourer insert to control flow, 4L tins have a pull up pouring spout, and casks (bag in box) have a tap. The 2L cask tap provides great drizzling control and is drip free (turn off the tap until you feel a click). Our casks are also BPA free and keep oil fresher for longer by excluding air.
